If you don't have a waffle maker, don't sweat it. You will not miss out on the most amazing way to start a day. You can easily use the recipe and make equally as exquisite pancakes.
Here is what you will need.
You will prepare the following sponge in a bowl the night before.
1 cup of sourdough starter ( it can be a weak starter but it should show signs of some bubbles)
2 cups of buttermilk*
2 Tablespoons honey or organic sugar
1 cup of whole wheat flour
1 cup of all purpose flour
* if you don't have buttermilk you can make it by adding 2 Tablespoons of apple cider vinegar in a measuring cup, then fill with 2 cups of organic milk.
In the morning or before making your waffles, mix the following ingredients together and add it to your overnight sponge.(above)
2 eggs
1/4 cup of coconut oil in liquid state
3/4 teaspoon of sea salt
1 teaspoon baking soda
1 teaspoon of cinnamon
2 teaspoon vanilla extract
Once the batter is mixed, pour it in batches into a hot waffle iron or skillet that has been greased with coconut oil, to make waffles or pancakes. Serve with your favorite pancake toppings such as fresh fruit, yogurt or Pure Canadian maple syrup. ( it has to be Canadian)
The smell of cinnamon and fresh baked bread will fill your house. These waffles/pancakes made the perfect Easter breakfast but they will also make for a most appreciated Mother's Day breakfast. Hint, hint Dads.
KITCHEN TIP: Make a double batch as these freeze well. The pancakes or waffles can be easily warmed in your toaster and enjoyed just as much as when they were made fresh.
